Brunch at Home

Hey Everyone!

I hope you have been enjoying this nice weather as much as I have been enjoying it. If you have been reading my blog for a while, you’ve probably gathered how much I love food. I think God’s greatest creation was food, followed by people who could turn food into wonderful dishes lol. In all seriousness, cooking food allows me to be creative with different ingredients.

Sometimes I like to go out with friends and family to local brunch spots on the weekends. It’s a great time to enjoy each other’s company, and indulge in dishes from pancakes to shrimp and grits. However, sometimes it’s nice to make brunch at home and lounge in your pajamas. That was the mood for me last weekend. Earlier that week, while visiting a new grocery store in the area, I picked up a loaf of multigrain bread. Although I did not know what I was going to eat the bread with, it was hard to pass the aroma coming from the bakery. I also picked up a couple of more items, including avocados that were on sale. Then it hit me, I’ll make avocado toast for brunch.

If you look on Pinterest, you will find many versions of avocado toast. Some recipes slice the avocados, while other recipes include various toppings such as vegetables and cheese. My version, however, is quite simple…just three main ingredients.

Step 1

Combine one ripe avocado, 2 teaspoons of lime juice, salt, pepper, and cayenne (all to taste) in a bowl. Then mix them all together, until it is the same consistency as guacamole.

Toast your bread.                                     Scramble 1-2 eggs, lightly season them

with salt and pepper.

Step 4

Place the avocado mix on the toast, followed by the scrambled eggs, and garnish with a little bit of cayenne. Voila. And there you have a healthy brunch dish in less than five minutes…more time to lounge around and enjoy the nice weather.
