Hey everyone!
I’m excited to share with you another easy recipe that is perfect for lunch and dinner. And I am sure that you will enjoy it as much as you enjoyed my baked jackfruit empanada recipe. Thank you for all of your support, I was overwhelmed by the number of likes I had for the recipe.
This week, I was focusing on creating simple and easy dishes with ingredients already in my fridge/pantry. A couple of weeks ago, I decided to make Philly Cheesesteak stuffed peppers inspired by Dinner at the Zoo (found here). I decided to use the same sliced sirloin beef for my stir-fry dish. As the title of this post states, I was able to make this entire dish in one pot. Well, technicaly I used another pot to make the rice, but that doesn’t really count.
For the Stir-Fry I used:
1 Bag of Frozen Broccoli
1 Red Bell Pepper
1 Green Bell Pepper
2 Frozen Sirloin Beef “Steaks”
2 Cloves of Garlic
Salt and Pepper to taste
For the sauce I adapted the recipe from Tomato Boots, since I didn’t have all of the ingredients. For my sauce, I used:
2 Tablespoons of Brown Sugar
2 Tablespoon of Soy Sauce
1 Tablespoon of Balsamic Vinegar
1 1/2 Teaspoon of Sesame Oil
3/4 Tablespoon of Flour
2 Dashes of Cayenne Pepper
Step 1: Mince 2 cloves of garlic then place in pot with oil on medium heat. When you start to smell the garlic, place frozen broccoli in the pot. (Note: if using fresh broccoli, the cooking time will differ for this step). When broccoli is thawed, lightly season with salt and pepper and transfer to a bowl.
Step 2: Place both sirloin “steaks” in pot and add a little more oil. Sear each side for two minutes, then continue to let the meat cook.
Step 3: While the meat is cooking, wash and slice your bell peppers.
Step 4: Mix all of the ingredients for the stir-fry sauce. When the meat is almost completely cooked, add the stir-fry sauce, broccoli and bell peppers. Cook until the bell peppers are tender.
Step 5: Serve with rice or noodles. Enjoy!
